What makes our bread great?
Our bread is produced using ancient methods originally used as early as 1,500 BC. The dough is leavened by wild yeast and lactic acid bacteria naturally present in the flour. The bread rises because of the gas that’s produced during the natural fermentation process. No store bought yeast is ever used in our sourdough loaves.
Wild yeast takes much longer to ferment and rise the dough than bread made with commercial yeast creating the unique texture and characteristic taste. The bread is then baked on a stone hearth. The result is a beautiful rustic loaf with a dark crackly crust and a deliciously subtle tang.
Naturally leavened bread is healthier. The fermentation process breaks down gluten that can cause bloating and other digestive complaints. Naturally leavened bread has a lower glycemic index and the lactic acid present in sourdough helps your body to absorb more of the nutrients than you would from other breads.
Finally, if that’s not enough, it just tastes better.
